Do you ever happen to buy more carrots than you actually need? How to use the carrots left in the fridge? This Roasted Carrots Shallots and Yogurt Zaàtar Sauce recipe come in handy.
Super simple, delicious, doesn’t hit the bank account and it will use the carrots that are left in the fridge for some time. The creamy greek yogurt makes this dish super rich and full of flavor. It's a must to try it with some warm pita.

Ingredients we find on this dish:
- Carrots- keep the carrots whole. In order to achieve an evenly cooked carrots.
- Shallots- to preserve that beautiful shape, cut them into halves in a chopping board, remove the external peel, and cut the root, just the brown part.
- Garlic- finely chopped.
- Olive oil- use Extra virgin olive oil as enhancing the flavour and contains vitamin E.
- Salt and Black Pepper- enhancing the flavor.
- Greek yogurt- creates a creamy and soft texture. The acidity of the Greek yogurt provide the perfect balance to the sweetness given by the carrots and shallots.
- Dill- finely chopped leaves to mix in the yogurt sauce.
- Zaàtar- to be added to the yogurt sauce.
What is the Zaàtar?
Zaàtar is a combination of spices such as dry thyme, oregano, Majorana leaves and flower, toast sesame and the sumac; it comes from the Middle East and it is an explosion of flavors. (If you want to make your own I leave the method below in the note)
For instance, it's delicious to sprinkle all over vegetables, cheeses, meats - especially with lamb - then again sprinkle over the flatbread as Lebanese do.
How to serve it with?

Roasted Carrots Shallots with Zaàtar Yogurt Sauce
Equipment
- Vegetable Knife
- Chopping board
- Baking paper
- Medium oven tray

Ingredients
Roasted Carrots and Shallots
- 12 medium Carrots
- 8 medium Shallots
- 2 garlic glove finely cut
- 2 pinch salt
- 2 pinch black pepper
- 6 tbsp olive oil extra virgin
Zaàtar Yogurt sauce
- 560 gr Greek yogurt with 5%of fat
- 2 garlic glove finely cut
- 2 pinch salt
- 16 gr dill leaves finely chopped
- 2 tablespoon olive oil extra virgin
- 2 teaspoon Zaàtar
Instructions
Roasted Carrots and Shallots
- Preheat theoven 200°C convection / 180 °C fan / 4 gas / 400°F.
- Cut the shallots into halves in a chopping board, remove the external peel and cut the root, just the brown part so once cooked it will remain in that beautiful shape. Place the shallots in an oven tray covered with some greaseproof paper and set aside.
- Wash the carrots under cold running water to remove the dirt from them. Peel the carrots over the length and place them on the tray with the rest of the shallots, drizzle with some olive oil, add garlic, salt and pepper and mix until well combined. Place the tray in the oven and let it cook for 1 hour,check every now and then the vegetables so they don’t get burnt.
Zaàtar Yogurt sauce
- Place the yogurt, the garlic, the salt, the Zaàtar, the olive oil, the chopped dill in a medium bowl and combine. Try the sauce to adjust the salt. Remove the tray from the oven once the vegetables are golden and set aside.
Serve
- Spread the yogurt in a serving plate. Place the carrots, the shallots on top of it, add some dill leaves and a drizzle of olive oil.

Can I replace the Greek yogurt with the whole yogurt?
Yes, of course.How long can I keep the leftover for?
The leftover can be kept for up to 2 days in the fridge in an airtight container.I don’t have the Zaàtar, what can I use instead?
Instead of the Zaàtar, you could easily use a combination in equals parts of dry thyme, oregano, marjoram, and toasted sesame seeds. If you have time to make your own Zaàtar is super simple, place equal parts of dry thyme, oregano, marjoram, toasted sesame seeds, and the sumac in a small jar and that’s it, I told you it was super easy.Tried this recipe?
