- 320 gr shortcrust pastry Rolled sheet rectangle
- 110 gr basil pesto
- 4 heirloom tomatoes washed
- 2 tablespoon olive oil extra virgin
- 1 pinch salt
- 1 pinch ground black pepper
For the toppings
- 6 basil leaves
- 185 gr burrata cheese

Preheat the oven at 180°C fans, 200°C static, 6 gas mark.
Unroll the shortcrust pastry on a baking tray, you can use baking paper that comes with the pastry, spread the pesto over the shortcrust leaving 1 cm of space from the edge of the rectangle.
Cut the tomatoes in slices of 0.05 cm thick, place them in the bed of pesto, sprinkle the extra virgin olive oil, the salt, and the black pepper over the tart.
Close the side of the shortcrust pastry folding each side and brush each one with some extra virgin olive oil.
Cook in the oven for 30 minutes or until the edges of the shortcrust pastry are golden and the tomatoes are starting to soften.
I don’t find the heirloom tomatoes in my stores, what can I use instead?
No problem at all, you can use certainly cherry tomatoes, they are sweet, or any tomatoes varieties really: the sweeter the better.
I don’t have or can’t find burrata cheese, what can I use instead?
You can substitute the burrata cheese with mozzarella cheese or cottage cheese, but the flavor will be different though as the burrata cheese has a more delicate and creamy taste.
