Roasted Carrots and Shallots
- 12 medium Carrots
- 8 medium Shallots
- 2 garlic glove finely cut
- 2 pinch salt
- 2 pinch black pepper
- 6 tbsp olive oil extra virgin
Zaàtar Yogurt sauce
- 560 gr Greek yogurt with 5%of fat
- 2 garlic glove finely cut
- 2 pinch salt
- 16 gr dill leaves finely chopped
- 2 tablespoon olive oil extra virgin
- 2 teaspoon Zaàtar
Roasted Carrots and Shallots
Preheat theoven 200°C convection / 180 °C fan / 4 gas / 400°F.
Cut the shallots into halves in a chopping board, remove the external peel and cut the root, just the brown part so once cooked it will remain in that beautiful shape. Place the shallots in an oven tray covered with some greaseproof paper and set aside.
Wash the carrots under cold running water to remove the dirt from them. Peel the carrots over the length and place them on the tray with the rest of the shallots, drizzle with some olive oil, add garlic, salt and pepper and mix until well combined. Place the tray in the oven and let it cook for 1 hour,check every now and then the vegetables so they don’t get burnt.
Zaàtar Yogurt sauce
Place the yogurt, the garlic, the salt, the Zaàtar, the olive oil, the chopped dill in a medium bowl and combine. Try the sauce to adjust the salt. Remove the tray from the oven once the vegetables are golden and set aside.
Can I replace the Greek yogurt with the whole yogurt?
Yes, of course.
How long can I keep the leftover for?
The leftover can be kept for up to 2 days in the fridge in an airtight container.
I don’t have the Zaàtar, what can I use instead?
Instead of the Zaàtar, you could easily use a combination in equals parts of dry thyme, oregano, marjoram, and toasted sesame seeds. If you have time to make your own Zaàtar is super simple, place equal parts of dry thyme, oregano, marjoram, toasted sesame seeds, and the sumac in a small jar and that’s it, I told you it was super easy.
